Apple-Honey Latkes



It's quite easy and delicious dish I found in one of the cooking book published by "Better Homes and Gardens" magazine. Most important, all ingredients are always at home.


Make 8-10 big pancakes.


1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon apple pie spices (if you like it)
1/8 teaspoon baking soda
1 beaten egg
3/4 cup apple juice
2 tablespoons honey
1 tablespoon cooking oil
Nonstick cooking spray


In a medium bowl stir together flour, baking powder, salt, apple pie spice, and baking soda. Make a well in the center of the flour mixture; set aside. In a small bowl stir together egg, apple juice, honey, and oil. Add egg mixture all at one to flour mixture, stirring until mixed but still slightly lumpy.


Lightly coat a nonstick griddle or heavy skillet with nonstick cooking spray. Heat over the medium heat. For each pancake, pour about 1/4 cup of the batter onto the hot griddle or skillet. Cook for 2/3 minutes or until pancakes have bubbly surfaces and edges are slightly dry. Turn pancakes, cook for 2-3 minutes more or until golden brown.
