As all of you noticed, I like avocado and use for many recipes. I really like this enhanced recipe of egg salad.
Avocado Egg Salad
8 whole Hard Boiled Eggs, chopped
2 whole Avocados, peeled and pitted
2 gloves garlic
4 Tablespoons Mayonnaise
1/2 lemon, juice
Salt, pepper To Taste
Parsley and dill, Chopped
Combine avocado, garlic and lemon juice in the bowl of a food processor. Pulse a few times, scraping the bowl once or twice if necessary. Continue pulsing until smooth condition.
In a bowl, mix together eggs, avocado mix from food processor. Add mayonnaise, salt, pepper. Garnish with parsley and dill.
