Couple days ago I received a wonderful book "Passover made easy" by Leah Schapira & Victoria Dwek. I found several GREAT recipes I have to try immediately One of them pineapple pie. It's one of the easiest and quickest dishes I ever tried. The texture is so unusually delicious and fresh. I shall make this dish again. Plus I can not wait for another healthy Passover dish - Citrus Beet Salad with Honey-Balsamic Vinaigrette. make pineapple pie and wait for my next blog post.
Pineapple pie
1/2 cup potato starch
1/2 cup sugar
1 teaspoon vanilla sugar
1/2 cup oil
4 eggs
1 teaspoon baking powder
1 3/4 cups chopped fresh ripe pineapple or 1 (16-oz can) pineapple chunks, drained
Preheat oven to 350F. In the bowl of blender or food processor, combine potato starch, sugars, oil, eggs, baking powder, and pineapple. Pour into 2 pie plates or 1 (9-inch) round baking pan. Bake 30-45 minutes, until pie is firm and golden on the edges.
